Starting with your base soup, you can choose from different broths including spicy, Taiwanese influenced, and traditional. While your broth heats up, you can head to the buffet which offers aisle after aisle of fresh vegetables including greens (kale, lettuce, cabbage), roots (potato, sweet potato, taro), fresh pasta (green tea, black sesame, potato), tofu (skin, dried, fresh), and the options just keep going. All are vegetarian except for a lone pork dumpling area and additional (thin slices of) meat can be purchased.
If you've never had Shabu Shabu before it's a great place to start, servers will explain the drill (and all those utensils) and with all the veggie options you don't have to worry about dealing with raw meat. The gigantic place can get packed, so make sure to give yourself extra time to wait.
